The word strudel is simply the German for whirlpool, and it describes the spiral you only see once the loaf is cut — the reason a strudel is named for the inside rather than the outside. The pastry is what makes that spiral possible: strudel dough is worked and rested until it can be stretched by hand over the back of a cloth-covered table until it is thin enough to read newsprint through, then rolled around the fruit. A pie keeps its filling in a dish. A strudel keeps it in a coil.

Choosing a Color
Natural. Warm undyed cream, and the closest match to the pastry and the cream flowers. The most old-fashioned of the seven, and the one that reads most like a kitchen.
White. The option shown. The cleanest separation between the blue plate pattern, the gold crust and the greenery.
Athletic Heather. A light flecked neutral that stays quiet and lets the gold, blue and green carry the design.
Dark Grey. A softer dark ground. The warm pastry tones stay forward without the hard edge of black behind them.
Black. The strongest contrast of the seven. The golden crust, the cream flowers and the pale plate all carry furthest here.
Navy. Picks up the blue of the plate pattern and sets it against the gold of the pastry.
Forest. Deep green that runs with the evergreen sprigs while the cream flowers and the plate stay separate from it.
